Maintains smoke chambers or ovens for smoking meat and its products. Hangs products in the smoking chamber; lights firewood or turns on gas, adds aromatic herbs, controls ventilation. After smoking, unhooks the products. Performs quality control and testing, ensures compliance with product quality standards. Follows safety and hygiene rules and performs all necessary actions, maintains optimal work pace.
