Maintains smoke chambers or ovens for smoking fish. Hangs prepared fish in the smoking chamber, lights firewood or turns on gas, adds aromatic herbs, controls ventilation. After smoking, unhooks the products. Responsible for fish smokehouse processes such as fish smoking, marinating, cutting, and packing.
