Processes dressed poultry. With a manual or mechanical disc knife, cuts off the head and wings of the dressed bird and hands over the poultry prepared in this way for further processing. Knows the anatomical structure of birds, the rules for cutting poultry intended for culinary products, the rules for sharpening and using disc knives.


Main activities

* cut, clean, rinse, marinate poultry;
* cut, freeze, can, mix additives, spices and other ingredients;
* prepare product packages, pack, control weight and quality, mark, store;
* wash, clean and disinfect the workplace, follow personal hygiene and food safety rules;
* look after the workplace, equipment, maintain and care for tools and devices.
